that's how guests are greeted at the front door of
Copley's On Palm Canyon. I opt for a ceiling of
stars and a curtain of mountains at this romantic
restaurant. The chef knows his clientele, 80
percent of them from the area, want to see tuna tartare
on the menu, yet he packages the commonplace appetizer
in a fresh way, splashing the dewy cubes of fish with a
lime dressing tucking them inside miniature "taco"
shells made with sesame seeds, miso and
ginger. House-made ravioli gets a filling of
roasted butternut squash flavored with honey and garlic;
the silky pasta, garnished with a foamy chardonnay
butter sauce, sits on gratineed goat cheese. Herbs from
the garden lend lushness to one of Copley's best
conclusions: lavender infused pound cake with basil ice
cream, the flavors in each identifiable but used with
restraint so as not to overwhelm diners' taste
buds.

HIT-THE-SPOT
SOUPS - The Spot, Movie buffs make a pilgrimage to
Copley's On Palm Canyon because its Cary Grant's former
estate, but regulars like it because of the garden-party
atmosphere and the tasty, tropical-inspired food.
The chilled asparagus-and-sweet pea soup, available in
the spring and summer, is a blend of asparagus and sweet
peas, accompanied by flash-fried Maine
lobster.

Authority recently named Copley's On Palm
Canyon the 2009 Coachella Valley's Restaurateur of the
year. The Hospitality
Achievement Awards recognized restaurateurs, hoteliers,
and hospitality business owners throughout the desert
community who were nominated by peers to receive the
honor.

nearby Melvyn's Restaurant and Lounge, which opened as
an inn in 1935, it has a different sort of storied past
- it's housed in what was once Cary
Grant's estate - and food that incorporates
21st-century flavors (the spring menu included dishes
like a duck and artichoke salad with goat cheese,

Chef Andrew Copley of Copley's on Palm
Canyon is ready for his first cooking class of the new
year. The Happy Hour Class at 5:45 p.m. Thursday
offers up sugarcane shrimp with Thai curry sauce. The
cost is $30 and includes a glass of wine, hors d'oeuvres
and Copley's cooking demo. Guests who stay for dinner
also get a 25 percent discount on their meal. From 11:30
a.m. to 2:30 p.m. Jan. 25, Copley presents a lunch class
that features an entree of crispy skin Scottish salmon
and a dessert of white chocolate margarita with lime and
tequila. The $90 cost includes three-course lunch with
paired wines and recipe cards to take home. Reservations
are required for lunch and are highly suggested for the
Happy Hour class.

Cooking Demonstrations from 5:45 to 7 p.m. the third

Copley’s expertise. Stay for dinner and take 25 percent
off your check. Copley also offers three-hour cooking
classes with a three-course lunch the second Saturday of
each month.

restaurant in a rustic-chic cottage that was once home
of Cary Grant.
Set deep inside a torch-lined garden, the
restaurant, partly owned by the British chef Andrew
Manion Copley, serves quirky American cuisine like “Oh
My Lobster Pot Pie” and charred prawns and scallops over
creamy sweet corn puree. Reservations are
recommended: on weekend nights, the lines can stretch
out the door.

refurbished the property, exposing original hardwood
floors to create an intimate and warm dining space,
while transforming the garden into a picturesque outdoor
dining patio.
The char-grilled “huge” pork chop is a standout,
as are the honey-mustard short ribs. For dessert, the
homemade lemongrass ice cream is
sublime.
